Mulled Wine

This was another debut chocolate in the 2017 Christmas Boxes. I suggested to Richard that a Mulled Wine flavour might be a nice addition. As a fan of the stuff myself, I was of course chief taster for this one as Richard is not much of a fan. This one went down so well last year that it has a place in the 2018 boxes too. 

Richard investigated how the most famous chocolatiers create their mulled wine chocolates and learned that most add the wine directly into the chocolate – without using cream, as that dulls the wine notes. He decided this was a good starting point and tried it, this was the first time he hadn’t used cream as an element in the process. It seemed to work extremely well – simplicity winning once more. 

The wine flavours linger longer on the palate without cream being present. He used milk chocolate to relax the bitter notes and give a richer flavour. He coated them in milk too. As the truffle is consumed, the chocolate flavour fades to the mulled wine and gives you a Christmassy feeling. 

He believes this will be staying in the boxes for a long time to come as people just LOVE them. He chose the star shape as it is a festive flavour and gives interest in the box itself. The decoration has changed from last year, but the shape will probably always remain a star as this was the first official Lefevre Chocolate flavour – the first time myself and Richard collaborated to create a flavour together.
